Raspberry Coconut Bliss Balls

Ingredients

Makes ~20 balls

Raspberry Coconut:

1 cup cashews or almonds
1 cup oats
1 cup raspberries (frozen works well)
80g of vanilla protein powder (or 1/2 cup milk powder also tastes great and adds a protein boost)
1 tsp vanilla
10 medjool dates, pitted
¾ cup desiccated coconut
2 tbsp coconut oil, melted

Variations

Stawberries & Cream:

Switch raspberries for frozen strawberries

Choc Raspberry:

Add 2 tbsp cocoa or cacao OR just add 1/4-1/3 cup of cacao nibs to the mixture before rolling.

Mango Macadamia:

Use 1 cup frozen mango instead of raspberries.

Add 1/3 cup chopped macadamias to the mixture before rolling.

Mango Raspberry:

Use ½ cup frozen mango, ½ cup frozen raspberries.

How to

  1. Combine all ingredients into a food processor and blend until a consistent mixture forms (the mixture shouldn’t be crumbly – it should roll into a ball easily).
  2. Roll mixture into balls (~ 1 tsp is a good guide) and coat with topping of your choice.
  3. Store in the freezer (this will keep them firm).
